In 1927, the USDA eslablished a standard by which American beef would be graded. Prime beef accounts for only 2% of all graded meat. AJ’s uses only the best quality USDA Prime beef from premium sources.

We have a unique preparation for our steaks. We season generously with salt & pepper & smoke them in our offset pit – this gives them a smokey, peppery flavor. We then utilize modern technique with sous-vide. They are cooked sous-vide until deliciousy fender, then finished to order with live-fire. You’ve never had a steak quite like this.
